When you think of tropical drinks, do you think of fruit? After one pineapple and mango drink after the other, we were starting to crave something a bit warmer and less sweet. A drink that conjures up images of relaxing after a long day in the sun and watching the sun set. Coconut came to mind, as well as a warming chai tea. Pair the two together, and you've got some delicious milk that you can use in cocktails, coffee, or even in savory meals.

That being said, we're shaking things up and going a different route with our tropical-inspired drink. This Coconut White Russian is an instant game-changer and crowd-pleaser. With coffee, coconut, chai, and the slightest hint of vodka, you'll want to sip this drink under the shade of the palm trees day or night (or in front of a tropical-themed movie. Either way, win win!).

Coconut White Russian

Serves: 1 | Mixing time: 5 minutes

Ingredients

  • 2 oz vodka

  • 1 oz Kahlua

  • 1 can of coconut milk

  • 2 bags of chai tea

Method

  1. In a small pot over low-medium heat, add the can of coconut milk and heat until you see the beginnings of a simmer. Once warm, add the chai tea bags.

  2. Remove the milk from the heat and steep for 8-10 minutes.

  3. In a cocktail mixing glass, add ice, vodka, and the Kahlua. Mix well and pour into a drinking glass with ice (or one big ice cube).

  4. Pour the chai-steeped coconut milk over the mixture and swirl until combined.
