Eggnog Pancakes & CHRISTMAS VACATION | Part II

Breakfast is my favorite meal of the day. While it can be a struggle to figure out what to eat on hectic weekdays, I love having slow weekend mornings and cooking a full-on breakfast. On a good day, that breakfast would include (not necessarily all at the same time) bacon, eggs, biscuits and gravy, French Toast, orange juice, fruit, and fluffy pancakes. Speaking of fluffy pancakes, these ones are the fluffiest I've ever eaten.

These eggnog pancakes are inspired by Christmas Vacation, once again. It's such a great movie that it warranted two posts. In this film, Clark Griswold wants his family to have a perfect Christmas. He goes out of his way to cut down a real tree (from the middle of nowhere) and string lights on the house (so that they have the brightest home on the block). But when Clark’s cousin, Eddie, shows up unexpectedly with his family, he brings chaos with him.

I used some of the eggnog that I made for Eggnog Bread, and let's just say it was a game changer.  The cinnamon and nutmeg came out in all of its eggnog glory, and the baking powder made these pancakes rise like a cake. They are chewy on the inside with golden brown sides. Even though eggnog is typically a holiday beverage, it's such a great addition to this breakfast staple that you'll want to eat it all year round.

 Eggnog Pancakes inspired by CHRISTMAS VACATION

Serves: 4 large pancakes | Cooking time: 30 minutes

Ingredients

  • 2 cups all-purpose flour

  • 4 teaspoons baking powder

  • ½ teaspoon salt

  • 1 teaspoon ground nutmeg

  • 1 ½ teaspoon ground cinnamon

  • 2 tablespoons granulated sugar

  • 2 ¼ cup eggnog (homemade or store-bought)

  • 2 large eggs

  • 3 tablespoons melted butter

  • Maple syrup for serving

Method

  1. In a mixing bowl, whisk together flour, baking powder, salt, nutmeg, cinnamon, and sugar.

  2. In a separate mixing bowl, whisk together eggnog, eggs, and melted butter until well blended. Pour wet mixture into the dry mixture and whisk just until combined.

  3. In a medium sized pan over low-medium heat spread (so the sides don't burn before the inside has a chance to cook), add a slice of butter. Once the butter has melted, pour the pancake batter in a circle (or other shape for fun). Make the pancakes as big as you'd like.

  4. Cook the pancakes until the first side is golden brown, and then flip it over and cook until it is golden brown. Serve these pancakes warm with butter, maple syrup, and a cup of eggnog for good luck. Enjoy!
