Rockford Peaches Galette with Bourbon Vanilla Whipped Cream & A LEAGUE OF THEIR OWN

With spring comes baseball season. In the spirit of the game (and spring desserts), eat and watch a Rockford Peaches Galette with Bourbon Vanilla Whipped Cream and A League of Their Own. 

A League of Their Own is a gem of a movie. Starring Geena Davis at Dottie Hinson, Lori Petty as Kit Keller, Madonna as Mae Mordabito, and Tom Hanks as Jimmy Dugan, this movie shares the story of the first female professional baseball league, specifically the Rockford Peaches. The All-American Girls’ Professional Baseball League was established in 1943 when men were called away to fight in World War II. Dottie Hinson is empowering and inspiring, Kit Keller is relatable, and Jimmy Dugan is hysterical. You’ll feel a variety of emotions watching this movie, some of which include motivation, sadness, happiness, and amazement. This movie really makes you cognizant of time and mortality. The movie is deep and lighthearted at the same time, which is what makes it a memorable film that buries itself inside your head and heart.

Because the team’s name is the Rockford Peaches, what better than to fill this delicious dessert with sweet and ripe peaches? Marinated in cinnamon, vanilla, and honey, these peaches burst with flavor. I added chopped pistachios to counteract the sweetness of the fruit. The buttermilk crust contains just enough cinnamon and nutmeg for the slightest hint of spice. And because galettes aren’t complete without whipped cream, a dollop (or three) of homemade bourbon vanilla rounds out all of the flavors in a delightful way.

I chose to make four smaller galettes instead of one large galette so that they could each have their own design. In a symbolic sense, each galette is different as a way to reflect how unique each of the Rockford Peaches baseball players are. Making these galettes are a soothing, almost meditative process, and at the end you’ll have a sweet treat! These Rockford Peaches galettes will not let you down when you curl up on the couch to watch A League of Their OwnThe combination of butter, peaches, pistachios, bourbon, and vanilla will make you want to cry tears of happiness, but as Jimmy Dugan would yell, “there’s no crying in baseball!”

Rockford Peaches Galette with Bourbon Vanilla Whipped Cream

Serves: 4 | Cooking time: 2.5-3.5 hours

Rockford Peaches Galette Dough

Ingredients

  • 1 1/3 cups AP flour

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ½ teaspoon salt

  • 1 tablespoon brown sugar

  • 1 stick unsalted cold butter, cubed

  • ¼ cup cold buttermilk

Method

  1. Whisk flour, cinnamon, nutmeg, salt, and brown sugar in bowl. Add cubed butter and with your fingertips, pinch the butter and flour together to combine. You want there to be a marbling of butter to create a flaky crust.

  2. Create a well in the center and add buttermilk, and use fingers or fork to combine. The dough should be a blend of shaggy and moist – erring on the side of shaggy. When you pinch the dough it should stick together.

  3. I prefer to divide and roll out the dough first before refrigerating (keeps things clean and easy). For individual galettes, divide the dough into four equal pieces. Place a piece of plastic wrap on your workspace for each galette. Shape each piece of dough into a ball, flatten, and roll out on the plastic wrap. Roll the dough into a 6” circle and cover with a second piece of plastic wrap.

  4. Allow the dough to rest and refrigerate for one hour.

Rockford Peaches Galette Filling

Ingredients

  • 3 medium ripe peaches, supreme and thinly sliced

  • 2 tablespoons honey

  • ½ teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • 1 egg, for egg wash

  • Honey crystals / raw sugar

  • 1/2 cup pistachios, shelled, fine chop

Method

  1. Remove the dough from the fridge, unwrap, and arrange each circle on a baking sheet. Place the peaches in the center of each circle, creating any design you’d like.

  2. Fold the edges of the dough over the fruit toward the center of each circle, being careful not to press down on the fruit. The dough will stay where you fold it, just pinch together the dough itself onto each other to stick. Repeat for each galette.

  3. Place baking sheet with galettes into the freezer for 10 minutes so the butter can re-harden.

  4. Remove the baking sheet from the freezer and brush egg wash onto the edges of each galette. Sprinkle with honey crystals or raw sugar.

  5. Place the baking sheet back into the freezer for 10 more minutes. Pre-heat oven to 350°F. Place galettes in the oven and bake for 25-30 minutes, until the edges are golden.

  6. Sprinkle pistachios onto the crust and over the peaches.

Bourbon Vanilla Whipped Cream

Ingredients

  • 2 cups heavy cream

  • 1 tablespoon honey

  • 1 teaspoon vanilla extract

  • 2 teaspoons bourbon

Method

  1. Whisk cream, honey, and vanilla together. Place in bowl of stand mixer and whisk on high for 5-8 minutes until firm.

  2. Fold in bourbon with a spatula.

  3. Spoon whipped cream on top of the galettes and top with pistachios.
